It is no exaggeration to say that this restaurant is the most popular in Aomori and is famous for its dried fish (niboshi) ramen.

Despite its location, which is difficult to reach without a car, there is always a long line at lunchtime. The niboshi soup, made from homemade stone-roasted dried fish and dried flatfish, is available in three types: “light,” a clear soup made by draining the niboshi, “seabura,” a combination of seasoned back fat from Aomori Prefecture and garlic pork thigh fat, niboshi soup and grilled dried oil, and “kottori,” a thick, gray soup made from several kinds of niboshi in large amounts and combined with animal products. Each of the three types has a distinct umami flavor, yet there is no smell of dried sardines. The presentation is also beautiful, making this a restaurant that can be recommended to everyone. There is also an affiliated restaurant, Hirakoya Kiboshi, in town, so if you are going by public transportation, check this one out.
