Hirosaki-shi FOOD ART SOUVENIR

Café & shop BRICK is a café attached to the Hirosaki Museum of Contemporary Art premises, named after the museum’s historic bricks. Like the museum, it was designed by architect Tane Tsuyoshi and features an open space with a classical atmosphere.

The restaurant offers a menu rich in Aomori ingredients, with a particular focus on the prefecture’s apples. The signature apple pie has a lovely apple shape. The crispy apple pie is baked and filled with custard afterwards, just like cream puffs, making it a special menu item that allows you to taste the difference in temperature and texture.

Other inventive apple menu items include Aomori apples made into a special basque cheesecake, a galette courgette combined with buckwheat flour from Nishimeya Village, offering a comparison of ciders made in the shop’s cider studio and other facilities, and using cider as a sauce for dishes.

The menu is lined up in a row. Another exciting collaboration with the museum will take place in autumn 2024, when the ongoing exhibition ‘How were you born into this world?’ (a film about a US military base in Okinawa that begins with the question: if you combine an American doughnut with holes and a round Okinawan sata andagi over the fence of a US military base, can you create a perfect doughnut without holes? The menu was inspired by the film).

Grilled dishes using seasonal ingredients can also be enjoyed at the restaurant, offering a taste of Aomori’s unique culinary culture. In the shop area, you will find original museum goods, works by artists from Japan and abroad, and crafts from Tsugaru. The unique selection is unique to this area.
